     Crunchy Salmon Cakes

Ingredients
2 cups flaked cooked salmon
1/2 cup fine cracker crumbs
1 large egg, lightly beaten
1/2 cup celery
1/4 cup red onion
1/4 cup red pepper
1/4 yellow pepper
2 T parsley, minced
1 1/2 t capers
 
dash hot sauce
1/2 t Worcestershire sauce
3/4 t crab seasoning
1/4 t salt
1/4 t black pepper
1/2 cup mayo
1 t dijon mustard
2 T butter
2 T oil

Instructions
Combine all ingredients except for butter and oil. Divide into 8 equal portions and form into patties.
Heat butter and oil (1 T each) in a skillet. In batches of 4, cook salmon cakes 4-5 min on each side over medium heat.
Serve HOT
