     Strawberry Tea Bread

Ingredients
2 c. self-rising flour
1 c. sugar
1 1/2 c. strawberries (fresh, chopped)
1/2 c. chopped pecans
1 t. vanilla
1/4 c. oil
1/2 c. milk
1/4 c. melted butter
2 eggs, well beaten
 
1 8oz. pkg. cream cheese, softened
2 c. powdered sugar
2 t. vanilla
1 c. whipped cream
1 can sweetened condensed milk
1 pkg. frozen coconut

Instructions
Sift together flour and sugar into a large mixing bowl. Stir in strawberries and nuts. Thoroughly combine remaining ingredients and add to flour mixture. Stir quickly until well-blended. Prepare loaf pans with cooking spray.
Pour batter into pan and bake at 325 degrees for 55 minutes or until done. Let stand 10 minutes to cool. Spread coconut cream topping on bread.
Beat cream cheese, powdered sugar and vanilla. Fold in whipped cream and milk. Add 1/2 o coconut to mixture. Spread topping on bread and sprinkle with remaining coconut on top.
