     Zucchini Wrapped Pork

Ingredients
1 sm zucchini
12 to 16 oz pork tenderlion
Olive oil
1/3 c. purchased basil pesto
Small fresh basil leaves (optional)
Watercress (optional)
 

Instructions
Preheat oven to 450. Line baking pan with foil. set aside. With sharp knife or veggie peeler cut zucchini lengthwise in thin slices (you'll need 8 slices). Cut pork crosswise into 4 equal portions. Press meat down with palm of hand to flatten slightly.
Wrap each tenderloin portion with 2 zucchini slices. Place in prepared pan. Lightly brush with oil sprinkle with salt and pepper.
Roast uncovered 18 to 20 mins or until meat registers 160 degrees. Spoon some of the pesto over eah tenderloin jus t before serving and sprinkle with basil leaves.
Serve with remaining pesto and watercress
