|
Simmer potatoes in a pot of water until they are tender and pierce easily with a fork. Drain, cool slightly and scrape skin off of potato.

Cut potatoes into 1/4 inch slices (leaving them round shaped).

|
Using a pan large enough to fit all of the potatoes in a single layer saute the onions in the butter and oil until they are golden brown. Remove the onions and set aside.

|
|
Arrange potatoes in the pan in a single layer. Cook until golden brown on both sides. Add the onions back to the pan. Salt and pepper T.T.
