     Crab Vermicelli

Ingredients
3 Tbsp butter
2 Tbsp flour
1/2 cup light cream
1 cup crushed tomatoes
1/2 tsp fresh black pepper
8 oz crab meat
1/2 cup freshly grated Parmesan cheese
2 tsp basil
vermicelli noodles
 

Instructions
In sauce pan, heat butter, add flour and cook 2 minutes over low heat. Whip in the cream, simmer until a very thick sauce forms.
Whisk tomatoes and pepper, simmer for 4 minutes. Blend in crab meat, cheese and basil.
Cook noodles al dente in a kettle of boiling water, drain and place noodles in serving bowl and pour sauce over. Serve at once.
