     Avocado Ice Cream

Ingredients
2 pints of milk
2/3 cup sugar
2 eggs
4 tablespoons sugar
1/2 pint cream
1 tablespoon cornstarch
2 ripe avocadoes
juice 1 lime or 1/2 lemon
 

Instructions
Back in the hot summer days of my childhood there was always one tasty treat that I could turn to. The avocado ice cream my mother would make was the perfect dessert to compliment my days filled full of swimming and other outdoor activities. As the Arizona sun left it's hue of colors in the sky while it escaped behind the mountains, I would sit on my porch with a bowl of this unique frozen delicacy. This recipe must be shared so here is how it is made.
Heat milk and sugar to scalding. Add cornstarch, dissolved in a little water. Cook 3 minutes, stirring constantly. Remove from heat. Add beaten eggs and let cool before adding remainder of ingredients. Freeze in a refrigerator tray, stirring twice during freezing. (Or use freezer and then pack to ripen.)
