     Zucchini Pineapple Bread

Ingredients
3 eggs
1 cup oil
2 cups sugar
2 tsp vanilla
2 cups shredded zucchini, well drained
1 cup crushed pineapple
3 cups flour
2 tsp baking soda
1 tsp salt
 
1/4 tsp baking powder
1 1/2 tsp cinnamon
3/4 tsp nutmeg
1 cup chopped walnuts (optional)

Instructions
Preheat oven to 350 and grease 2 loaf pans.
Beat eggs, oil, sugar and vanilla. Add zucchini, pineapple and flour, mix well. Add remaing ingredients, mix well.
Bake for 60 mins, let cool for 10 min before serving.
