Heat oven to 350. Coat 3 quart casserole dish with cooking spray. Cook pasta according to package. Cook bacon in a medium sized sauce pan. Drain bacon on towels retaining 2 T. of drippings. Add butter and flour; whisk until smooth. Continue whisking while adding milk. Stir in onion, salt and pepper. Bring to boil, reduce heat and cook for 2 minutes. In a large bowl mix together shredded cheeses. Remove milk mixture from heat; stir in american cheese and 1 1/4 cups shredder cheeses. Add bacon to remaining shredded cheese. In pasta pot; combine pasta with cheese sauce. Pour half into prepared baking dish. Sprinkle with half the shredded cheese. Repeat layer. Bake for 20 minutes. Broil for 2 minutes on low.
