     Pleasantly Spicy Tofu

Ingredients
1 block tofu, cut into 1/2 inch cubes
1/2lb lean ground beef
1/2 C green onions chopped
1 T. ginger chopped
1 clove garlic chopped
1 red pepper minced or 1/2 t. crushed red pepper
1 T. oil
1 T. ketchup
1 T. shoyu
 
2 T. cooking wine
1/2 C soup stock or H20
1 T. cornstarch dissolved in 1/4 C. H20
3 T. peas cooked

Instructions
Dip tofu cubes in hot H20 for 30 seconds. Drain well. Heat oil in wok. Add ginger, green onions, garlic, and red pepper. Stir fry over high heat. Add 1/2 t. shoyu, reduce heat to medium. Simmer. Add ketchup, 1.5 T. shoyu, wine and soup stock.
Bring to boil. Add cornstarch slury and stir. Right before serving, stir in peas just to warm through.
