     Italian Potato Soup

Ingredients
3/4 to 1 lb. of Italian sausage (mild or spicy, your choice)
1/2 cup of chopped sweet onion
1/2 to 1 teaspoon of minced garlic
1 quart of organic chicken broth/stock
3 medium russet potatoes, halved and cut into thin slices
2 cups of sliced Swiss chard leaves, stems removed (can sub kale or spinach)
3/4 cup of half and half
1/2 teaspoon of salt, or to taste
1/4 teaspoon of pepper, or to taste
 

Instructions
Cook sausage in soup pot until completely done. You can use bulk sausage (break up in pan) or links (slice when done cooking). Remove sausage. Leave about a tablespoon of oil in the pan.
Put chopped onion in remaining oil and cook until almost translucent. Stir often so onion doesn't burn. Add garlic and cook one minute. Carefully add chicken broth and potatoes. Stir in salt and pepper. Bring to a simmer (uncovered) for 15 minutes.
Add sausage, chard, and half and half. Simmer 5 minutes and serve.
Serving Suggestions
Serve with fresh bread and a light salad.
