     Apple Cake

Ingredients
2/3 cup oil
2 eggs
3 cups peeled and chopped apples
1 1/2 cups sugar
2 tsp cinnamon
1 3/4 cups self-rising flour
1 T vanilla
 
Instructions
Beat oil and eggs until foamy. Stir in apples and sugar. Mix flour and cinnamon and add to batter. Stir in vanilla.
Bake at 325 uncovered for 35-45 minutes.
