     Cornish Game Hen & Wild Rice Supreme

Ingredients
4 fresh or frozen Cornish game hens
2 Tb. butter
1 Lipton long grain wild rice
1 chicken Rice-a-Roni fried rice
1 10.75-oz. can chicken broth
2 Tb. butter
1 bunch green onions
6 large mushrooms or 1 14.5-oz. can
1/2 cup dry white wine
 
2 bay leaves

Instructions
Thaw hens. Remove giblets. Rinse hens and pat dry. Brush inside out with 1 Tb. melted butter. Remove seasoning packet from rice mix. Use 1 tsp. per hen. Rub inside and out. Place hens, breast side up in a shallow roasting pan. Pour chicken broth and 1/2 cup water into pan. Bake at 450 degrees F for 25 minutes.
Meanwhile, melt 2 Tb. butter in a skillet. Add green onions, mushrooms, and rice. Saute. Slowly add 1 1/4 cups water, remaining seasonings, wine and bay leaves. Bring to a boil. Pour rice mixture into roasting pan. Bake at 350 degrees F for 45 minutes.
