Preheat oven to 450F. Mix apples, sugar, lemon juice, flour, and
cinnamon. Fill pie shell. Top with pie shell. Bake at 450 for 10
minutes. Place pats of butter on crust and sprinkle with sugar and
cinnamon. Bake at 350 for 30-35 minutes. (Put a baking sheet underneath
in case it runs over.)
For apple crumble pie, don't use the second pie crust. Mix 2/3 cup
flour, 1/2 cup brown sugar, 1/2 cup white sugar, 1 tsp cinnamon, 1 stick
of butter by hand to make large crumbs. Sprinkle over apple filling.
