preheat oven to 400f. place 6 papre cup in muffin tins.
place in a medium mixing bowl 2Tbs plus 3/4c flour, 2Tbs sugar, 1 1/4 tsp baking powder, and 1/6 tsp salt.stir well with a wooden spoon.

place in a second smaller bowl 1/2 beaten egg, 2Tbs & 1/4c milk and 2Tbs & 2tsp. cooking oil. stir well with a fork. pour milk mixture over flour mixture strir with the wooden spoon only till all the flour mixture is wet.do not stir too much or muffin will be hard.

spoon batter into paper cups carefully till each cup is about 1/3 full.place about a 1/2tsp. jam on the batter in each cup.

|
fill muffin cup with remaining batter. bake for 20-25 miinutes or until golden brown. after they are baked remove with a knife.
