     Spaghetti Sauce

Ingredients
2 Tbsp olive oil
1 medium onion, chopped
2 lg garlic cloves, minced or chopped
28-oz can Roma tomatoes
4 tomatoes, seeded and chopped
6-oz can tomato paste
1/2 c red wine
1/2 c water
1 Tbsp sugar
 
2 Tbsp fresh parsley
2 Tbsp fresh oregano
2 Tbsp fresh savory
2 Tbsp fresh basil

Instructions
In stock pot, add olive oil, onion, and garlic. Saute until tender.
Add canned and fresh tomatoes. Simmer 15 minutes until tomatoes are soft and breaking down. Add tomato paste. Stir.
Add wine, water, sugar, and fresh herbs. Stir. Simmer 15 more minutes and cool.
When sauce has cooled, process in food processor until smooth, but still retaining some texture. Transfer to slow cooker and cook on low 5-6 hours.
Serving Suggestions
Optional- Add hot Italian sausage, green, and red peppers to sauce in slow cooker.
