     Sweet and Sour Tempeh

Ingredients
1 pound tempeh , cubed
sesame oil ,for sauteing
1 cup plus 3 tbsps water for sauteing divided
1 med sized yellow onion ,diced
2 tbsp minced ginger
1 large size green pepper diced
1 cup green beans ends trimmed opt
7 oz apricot preserves look for one with no corn syrup
2 tbsp arrowroot powder dissolved in cold water
 
5 tbsp tamari soy sauce
3 tbsp apple cider vinegar
1 tbsp light miso paste
1/2 to 1 tsp crushed red pepper
2-3 tsp black sesame seeds garnish opt

Instructions
Add cubes of tempeh to 3 quart pot fitted with steamer basket and steam ten minutes . You can use them as are or saute them in sesame oil after steaming for flavor
Meanwhile heat 3 tbsp of water in pan over med heat .Add onion, ginger , bell pepper , and green beans if using and cook for 5 min or until onion is translucent and beans are bright green .
Combine remaining 1 cup water and apricot preserves cook ten minutes , stirring occasionally .Add arrowroot powder and stir for few minutes more add soy , vinegar , miso paste , red pepp flakes ,and cook for another ten minutes stirring constantly .Add steamed tempeh and mix well remove from heat garnish
Serving Suggestions
Can sub mango or mandarin preserves
