     Swiss Chard and caramelized onions

Ingredients
1 tbsp Earth Balance nondairy butter
2 large size yellow onions
1 tbsp granulated or brown sugar
pinch of salt
1 bunch swiss chard, washed and chopped
1/4 cup chopped kalamata olives
1 tbsp capers, rinsed of brine or salt
pepper
juice of lemon
 

Instructions
In large size saute pan (nonstick works well) heat oil or butter over med-high heat and cook until onions are brown slightly and turn translucent about 5 minutes. Stir in sugar and salt and continue cooking until onions are brown and sweet . This may take 15 -30 minutes depending how you prefer them. Stir occasionally. Stir in chard , olives, and capers , and cook until chard is wilted , 5-7 minutes . Season with black pepper and squeeze lemon over top.
