     Grilled Thick Steaks

Ingredients
1 tsp salt
1 tsp cornstarch
4 steaks (with or without bone), about 1 1/2 inches thick
Pepper
 

Instructions
Combine salt and cornstarch in small bowl. Pat steaks dry with paper towels and rub the salt mixture. Place steaks on wire rack set inside rimmed baking sheet and freeze until steaks are firm and dry to the touch, at least 30 mins or up to 1 hour.
Heat all burners on high, covered, for 15 mins. Leave primary burner on high and turn other burners off. Scrape and oil cooking grate.
Season steaks with pepper. Grill, covered, over hot fire, turning once, until well browned, 2-3 mins per side. Move steaks to cool side of grill and continue to cook to desired doneness, 5-6 mins for rare, 6-7 mins for medium rare, or 8-9 mins for medium. Transfer to a plate, tent with foil, and let rest for 5 mins. Serve.
