     Fresh Peach Pie

Ingredients
Pastry for 9-inch Two-Crust Pie
5 Cups Sliced Fresh Peaches (About 9 medium)
1 t. Lemon Juice
1 Cup Sugar
1/4 Cup Flour
1/4 t. Cinnamon
2 T. Butter or Margarine
 

Instructions
Heat oven to 425 degrees. Prepare pastry. Mix peaches and lemon juice. Stir together sugar, flour, and cinnamon. Mix with peaches. Turn into pastry-lined pie pan. Dot with butter. Cover with top crust, seal, crimp edges. Cut several slits in top crust. Cover edge with 2-3 inch strip of foil. Remove foil last 15 minutes of baking. Bake 35-45 minutes until crust is brown and juice begins to bubble through slits in crust.
Variation- Canned Peach Pie Substitute 2 cans (1 lb. 13 oz. each) sliced peaches, drained, for fresh peaches and decrease sugar to 1/2 cup.
