     Orange Cranberry Loaf

Ingredients
1 egg beaten
1/4 cup veg oil (or a little more yogurt)
1 orange - grated peel and juice of
milk - enough added to the orange juice to make it 1 cup total
2 cups flour
1 cup sugar (I use a bit less)
1/4 tsp salt
1 1/2 tsp baking powder
1/2 tsp baking soda
 
1/2 cup finely chopped pecans (nuts or seeds of any kind! wee!)
1 cup cranberries - do not thaw if frozen (?) (Or fruity delights of your choice!)

Instructions
-preheat oven to 180 C and grease the loaf tin -Mix first four (wet) ingredients in one bowl -Mix rest in another bowl and then combine the two mixes - Do not over mix, leave slightly lumpy -Bake for one hour or until toothpick inserted in middle comes out clean -let cool in pan for ten minutes and then turn out on to cooling rack -Slices better the next day -Eat it
