Ingredients
2 cups flour
2 cups sugar
2 tea. baking powder
2 tea. baking soda
pinch of nutmeg
2 tea. ground cinnamon
1 tea. salt
4 large eggs
1 1/3 cups canola oil
 
3 cups shredded carrots( about 6 medium)
1 cup pecans
1/2 cup raisins -optional
Frosting
1 pkg. (8oz) cream cheese,room temp.
1 box (16oz.) XXX sugar
1 stick unsalted butter, softened
2 tea. vanilla extract

Instructions
Heat oven to 350, butter 2 9inch round pans. In a medium bowl, stir together the flour,sugar, baking powder,baking soda,cinnamon,nutmeg and salt.In a large bowl, beat eggs lightly to combine, and then whisk in oil. Add the dry ingredients to the wet ingredients and stir to combine. Stir in carrots, pecans and raisins.
divide batter evenly in prepared pans. bake at 350 for 30-35 minutes or until toothpick inserted in middle comes out clean. Remove to rack & cool completely.
Frosting- In large bowl, beat together cream cheese, XXX suger and butter and vanilla. Frost cake. Store covered in refrigerator for up to 5 days
simpler version- bake in 9x13 pan for 45 minutes & simply frost the top!
