     (OZ) WESTERN SCRAMBLE

Ingredients
4 large EGGS
Handful SHREDDED CHEDDAR
2 Tbl. or more cubed HAM pieces
2 Tbl. Italian-style DICED TOMATOES w/juice
2 Tbl. diced GREEN BELL PEPPER
2 Tbl. diced WHITE ONION
1 Tbl. whole MILK
1 1/2 teas. real BUTTER
coarse BLACK PEPPER to taste
 
SALT to taste

Instructions
Place butter in nonstick skillet and saute onion and pepper. Add ham.
Whisk together eggs and milk. Add to skillet and scramble all together.
When eggs are set, mix in tomatoes w/ juice.
Mix in (preferred) or top with cheddar. If desired, sprinkle with salt and pepper.
Serving Suggestions
Serve with hot buttered toast. This can be adapted to an omelet - I spoon the tomatoes over the top in that case.
