     Sweet Potato Apple Salad

Ingredients
6 medium sweet potatoes
1/2 cup olive oil
1/4 cup orange juice
1 tblsp. apple cider vinegar
1 tblsp. white sugar
1 tblsp. dijon mustard
1 tblsp. chopped onion (celery would be a crunchy substitute here)
1 1/2 tsp. poppy seeds
1 tsp. grated orange peel
 
1/2 tsp. grated lemon peel
2 medium tart apples chopped
2 green onions thinly sliced

Instructions
In a large saucepan, cook whole sweet potatoes in boiling salted water until just tender, about 20 minutes. Let cool completely.
In a jar with a tight fitting lid, combine the next nine ingredients. Shake well. Once cooled, peel potatoes, Cut in half lengthwise and then into 1/2 inch slices. In a 4 quart bowl combine the potatoes, apples, green onions and dressing. Gently toss and refrigerate 1-2 hrs. before serving.
