1.Combine oatmeal, egg whites, cottage cheese and cinnamon into a blender. Blend on high until mixure gets to a batter consistancy. If the batter is very runny, add a little bit more oatmeal and blend again on high.
1.Heat up a small size non-stick frying pan on medium heat. The batter tends to be thin and spreads too far out if you dont use a smaller pan. Pour all the batter into the pan and fry like a normal pancake. One batch of batter makes one serving. You can split fry up smaller pancakes if you desire...but it all equals one healthy serving..so eat it all!
1.Serve hot with fresh blueberries on top (best when heated up in the microwave for a few seconds) and sugar free maple syrup. Yummy!
Make sure to watch the heat...they tend to burn easily.
