     Oatmeal Rasin Cookies

1 1/2 cup sugar
1/2 cup firmly packed brown sugar
1 cup margarine or butter softened
1 tsp vanilla
2 eggs
1 1/2 cup all-purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 cups quick cooking rolled oats
1 cup raisins
1 cup chopped nuts (oppitional)

Heat oven to 375, spray cookie sheets with nonstick cooking spray.
In large bowl combine sugar, brown sugar and margarine, beat until light and fluffy. Add vanilla and eggs; blend well. Add flour, baking soda, cinnamon and salt mix well. Stir in oats, raisins and nuts. NOTE- I like the jumbo raisin assortment from Trader Joes with regular raisins.
Drop dough by rounded teaspoonfuls 2 inches apart onto sprayed cookie sheets.
Bake at 375 for 7-10 minutes or until edges are light golden brown. Cool 1 minute remove from cookies sheets. Cool. Oatmeal cookies freeze well. Transfer cooled cookies to airtight containers and freeze for up to 6 months.
Serving Suggestions
Instead of raisins use your favorite dried fruit. Try apricots, blueberries, cherries, cranberries, chopped dates or figs.
