     Smoked Sausage Harvest Casserole

Ingredients
1 pound smoked sausage
5 cups chopped green cabbage
1 medium onion, chopped
1 cup sliced carrots
1 can (15 ˝ oz) drained red beans
1 can (16 oz) stewed tomatoes
1 tablespoon vinegar
2 tablespoons flour
Parmesan cheese
 

Instructions
Chop sausage into bite sized pieces and brown well. Add cabbage, onion, carrots, and sauté for 5 minutes. Add rest of ingredients and simmer until vegetables are tender. Add 3 tablespoons water to 2 tablespoons flour and stir well. Add to stew and sprinkle with cheese.
May have to vary water/flour/corn starch to thicken.
