     Southwest Salad

Ingredients
2 (14 oz) cans black beans, drained and rinced
1 (14 oz) can corn, drained and rinced
1 (14 oz) can heart of palm, drained and chopped
1 (14 oz) can petite diced tomatoes, drained
2 tsp coriander
1 large red onion, diced
3/4 cup cilantro, chopped
3 tbsp olive oil
2 garlic cloves, diced
 
6 tbsp lime juice

Instructions
Mix all ingredients in a large bowl
Season with salt and pepper to taste
Serving Suggestions
1/2 cup added to other salads, eggs, or as a salsa
