     SWEET POTATO CASSEROLE

Ingredients
3 Large Sweet Potatoes
4 tablespoons butter, softened
1 Cup white Sugar
2 Eggs
¼ cup Milk
1 tsp Vanilla Extract
½ tsp Salt
1 cup packed brown sugar (to taste)
 
1 cup chopped pecans
1/3 cup all purpose flour
3 or 4 tbs butter, softened
1 tsp cinnamon

Instructions
Poke holes in the sweet potatoes with a fork. Arrange the sweet potatoes on an aluminum foil lined cookie sheet. Bake sweet potatoes for 1 hour.
Let cool, then mash in a large bowl. Butter Grease a glass baking dish. Combine SUGAR, MILK, BUTTER, VANILLA, and SALT. TASTE.
Add EGGS (Slightly Beaten) Mix sugar mixture in with the mashed sweet potatoes Beat the mixture with an electric mixer until smooth. Pour mixture into prepared baking dish. Refrigerate Overnight.
Preheat oven to 350 degrees Combine BUTTER (softened) with BROWN SUGAR, NUTS, CINNAMON, and FLOUR; stir with a fork. TASTE Sprinkle the brown sugar-nut mixture over the top of the sweet potato mixture. Bake for 35 minutes.
