Melt the butter in a deep pot and add the leeks and potatoes.Cook on a lowish heat for 2 mins to coat the veg. Add the stock and bring to the boil, then turn down and simmer for around 2 hours. When cool blend the leeks and potatoes [in a processor] and return to pot, mixing with reserved liquid.Salt and pepper to taste. Milk may be added at this point if desired or a little cream before serving to give it a marbled look if wanting to impress If the soup is looking too thick just add more water.
