     Avocado and Grapefruit Salad

Ingredients
1 large grapefruit
1 large ripe avocado
Large lettuce leaves (Boston or Red Leaf lettuce)
1 to 2 tablespoons lemon juice or grapefruit juice
1/4 to 1/2 teaspoon dry mustard
1 tablespoon chopped red onion or shallot
1/4 cup olive oil
salt and fresh ground pepper to taste
(may add 1 tablespoon chopped cilantro or 1/2 clove minced garlic if desired)
 

Instructions
Peel and pit the avocado and cut into strips. Peel the grapefruit, remove the flesh from the white membrane, keeping the sections whole. Remove seeds. (Alternatively, cut grapefruit in half and remove sections with a serrated knife, removing pits. Squeeze out remaining juice for dressing)
Wash lettuce and arrange in a layer on four salad plates or one larger serving plate. Arrange strips of avocado alternating with the grapefruit sections on each plate. Keep chilled until ready to serve.
Mix the lemon or grapefruit juice, dry mustard, and shallots or onions. Add olive oil, salt(about 1/4 teaspoon) and pepper to taste. Add cilantro or garlic or both if desired.
Spoon dressing over salad just before serving.
