1 C cooked rice (1/3 C uncooked)(can be Minute Rice)
1 lb ground beef
1/4 C chopped flat leaf parsley
1/4 C grated parmesan cheese
1/4 C chopped fresh basil
salt & pepper to taste
2 C prepared tomato sauce
Instructions
Wash peppers, cut out tops and clean out ribs & seeds. If peppers large, can cut in half. Will need double stuffing recipe if making 12 halves.
Make stuffing by mixing together rice, meat, parsley, cheese, basil, salt & pepper.
Place some sauce, mixed with a little water in bottom of large pot. Stuff peppers with filling and place in bottom of pot. Top each pepper with tomato sauce.
Place top on pot, bring diluted sauce to boiling and lower to simmer. Cook peppers for 1 hour, until meat is cooked.
