     Pasta Carbonera

Ingredients
4 tsp Olive Oil
1/4 lb bacon
1/4 lb pancetta or proschuitto
1 small onion chopped
1/2 stick butter
1 lb. linguini
4 tbsp water
3 egg yolks
1/4 cup parmigiano cheese chopped
 
parsley for garnish

Instructions
Heat oil in pan. Add bacon, pancetta and onions. Saute. Add al dente linguine and butter to saucepan and toss.
Add egg yolks, water and cheese.
Take off flame.
Garnish with chopped parsley.
