     Thumbprint Cookies

Ingredients
1/2 cup sugar
1 cup butter, softened
1 tsp almond extract
2 egg yolks
2 1/2 cups flour
1 tsp baking powder
2 egg whites
3/4 cup pecans, finely chopped
 

Instructions
Preheat oven to 350 degrees. Cream butter, sugar and almond extract until light and fluffy. Stir in egg yolks. Stir in flour and baking powder until well combined. Cover and refrigerate one hour.
In a small shallow bowl, beat together 2 egg whites with fork. Shape dough into 1 inch balls, dip in egg whites; roll in finely chopped nuts. Place on cookie sheet with thumb, making imprint in center of each cookie. Bake until golden brown around edges (10-13 mins)
Jam/Jelly filling- spoon 1/4 tsp any flavor jam or jelly into baked cookie.
