     Baba Ghanoush

Ingredients
2 Purple Eggplants
2 cloves garlic
1/4 cup Tahini
handful parsley
salt
pepper
olive oil
cumin
 

Instructions
Poke holes in eggplant with fork to allow steam to escape. Roast eggplant in oven or on grill whole till skin is charred and black and it is wilted and soft. About 30 to 45 mins.
In food processor or blender combine parsley, tahini, and garlic. Blend till combined well.
After eggplant is cooled enough, scrape out the insides tossing away as many seeds as you can. Place eggplant in processor or blender with the parsley tahini mixture. Add salt, pepper, and a touch of cumin. Imulisify with a little olive oil until smooth and creamy. Serve with veggies or pita bread.
