2 lbs. peeled quartered red potatoes

3/4 cup mayonnaise

1 hard boiled egg

Instructions |

Boil a pan of salted water, then add potatoes. Cook until tender, about 15 min.Drain
In a frying pan cook bacon until crisp.

In a large bowl, mix mayo, and mustard. Add cooled potatoes, chives, lightly mix.

Slice hard boiled egg to place on top of salad or dice and fold into mixture. Refrigerate
