     Turkey and Wild Rice Casserole

Ingredients
5 cups water
3/4 cup uncooked regular long-grain brown rice (see notes below)
3/4 cup uncooked wild rice (see notes below)
1 can reduced-fat cream of mushroom soup
1 cup fat-free sour cream
1/2 cup low-sodium chicken broth
1/4 cup grated Parmesan cheese
1/4 teaspoon dried thyme
1/4 teaspoon black pepper
 
4 cups (cubed or shredded) cooked turkey
1 (12 Oz) bag frozen mixed vegetables or frozen broccoli thawed
1/2 cup breadcrumbs
2 teaspoons olive oil

Instructions
In a 3-quart saucepan, heat water, brown rice, and wild rice to boiling. Reduce heat and cover. Simmer 40-50 minutes or until rice is tender. Drain if necessary.
Heat oven to 350 degrees. Spray 13x9 glass baking dish with cooking spray. In large bowl, mix can soup, sour cream, broth Parmesan cheese, thyme and pepper until well mixed. Stir in rice, turkey and vegetables. Spoon into baking dish.
In small bowl mix breadcrumbs and olive oil. Sprinkle over casserole.
Bake uncovered for 40-50 minutes or until edges are bubbly and bread crumbs are slightly browned.
Serving Suggestions
Can substitute 1 bag Trader Joe's cooked/frozen brown rice to cut down on cooking time - if doing so, skip step 2
