In a 3 qt saucepan, over medium heat, melt marg. Add onion,
garlic and grated carrot. Stir often, until veggies are tender.
Add rice stirring until the rice is opaque and most of the marg. is
absorbed (about 10 min). Stir in broth, salt, thyme, bay leaf. Bring
to boil. Reduce heat to low, cover until most of the liquid is
absorbed.
Remove bay leaf. Fluff and add parsley.
