     Hearty Sausage Mini Quiches

Ingredients
1/2 cup thinkly sliced green onion
1/2 cup diced sweet red pepper, optional
1 cup frozen cubed hash brown potatoes or diced red potatoes
1 TBSP olive oil, butter or margarine
1 Cup thinkly sliced mushrooms or yellow squash, opt.
1 package reg. flavor jimmy dean roll pork sausage, cooked, crumbled and drained
1 Cup (4 oz) shredded cheddar, mozzarella or provolone cheese
8 eggs, lightly beaten
1 tsp. salt
 
1/4 cup milk or water
1 tsp. salt
1/4 tsp. pepper
1/4 cup parmesan cheese, optional

Instructions
In a large skillet, saute onion and other vegetables if desired in oil until vegetabels are tender. Add sausage and cheddar cheese; stir well. Distribute sausage mixture evenly into foil-lined muffin cups. In a bowl, combine eggs, milk, salt and pepper; pour over sausage mixture. Bake at 350 for 22 minutes or until eggs are set. Sprinkle with Parm. cheese if desired.
