Heat oven to 350 degrees, coat garlic with 1 tbls of olive oil, place on cookie sheet. Roast 20-30 minutes until well browned and soft. Carefully remove cloves from the skin.
Boil potatoes until tender, about 15 minutes, drain and place in mixer bowl.
Add remaining ingredients along with the garlic and mix.
Notes-
I prefer a hand held masher over the mixer...I like them a little more rustic.
I warm the milk up in a saucepan with the butter before adding it to the potatoes.
