     Pot Roast

Ingredients
4-5 lb beef bottom round or rump roast
1 tbsp olive or canola oil
2 cup beef broth
2 cup ketchup
1/2 cup cider vinegar
2 med onions, chopped
2 cloves garlic, minced
6 tbsp brown sugar
5 carrots, quartered
 
5 ribs celery

Instructions
Rub roast with oil, Brown under broiler on both sides.
In 4-quart or larger slow cooker, combine broth, ketchup, vinegar, onions, garlic and sugar. Add roast, carrots, and celery.
Cover and cook until meat is fork-tender, on low 8 hours. Slice roast and serve with vegetables and sauce from cooker. Makes 12 servings.
Per Serving- 380 cal, 42 g pro, 28 g carb, 11 g fat, 3 g sat fat, 125 mg chol, 2 g fiber, 770 mg sodium.
