4-5 lb beef bottom round or rump roast

1 tbsp olive or canola oil
|

2 cup beef broth
|
|
2 cup ketchup
|
|
1/2 cup cider vinegar
|

2 med onions, chopped
|

2 cloves garlic, minced
|
|
6 tbsp brown sugar
|
|
5 carrots, quartered
|

Instructions |

|
Rub roast with oil, Brown under broiler on both sides.
|

|
In 4-quart or larger slow cooker, combine broth, ketchup, vinegar, onions, garlic and sugar. Add roast, carrots, and celery.
|

|
Cover and cook until meat is fork-tender, on low 8 hours. Slice roast and serve with vegetables and sauce from cooker.
Makes 12 servings.
