     Caribbean Chocolate Rum Balls

Ingredients
1 6oz pkg semi sweet Chocolate Chips
1/2 cup Sour Cream
1/8 tsp Salt
2 cups Vanilla Wafers, crushed
1/3 cup Rum (or coffee plus 1/4 tsp Rum extract)
1/4 cup Butter, melted
1 cup Powdered Sugar
1 cup Pecans, finely chopped
1/4 tsp Salt
 
1/4 cup Cocoa

Instructions
Melt chips over hot, not boiling, water. Add sour cream and salt. Stir until smooth. Let stand in refrigerator overnight. Shape into small balls next morning.
Mix together wafers, rum, butter, sugar, nuts and salt. Roll chocolate balls in crumb mixture. Roll balls into cocoa. Keep tightly covered. Improve with storage. Keeps in refrigerator for weeks.
