Ingredients
255g plain flour(if using SR flour just use 1 tsp baking powder)
3rsp baking powder (leveure chimique)
half tsp salt
85g granulated sugar
1 egg
240ml milk
90 ml veg oil
chocolate ones-
 
85g pepites
20 g powdered choc
extra half tsp of baking powder
250milk
70g sugar
rest the same
coffee walnut ones-
100g crushed walnuts, extra half tsp of baking powder and 3 tsp coffee diluted in water

Instructions
Oven on at 190 - 200 (fan 170) Gas 5-6 Sift flour, bp, salt & sugar. In separate bowl or jug, beat egg, add oil & milk, mix well. Pour liquid ingredients onto dry. Stir until JUST combined. Take about 30 seconds only, there should be no dry flour, but it will be lumpy & look a bit of a mess. Fill muffin cases about 3/4 full. Bake for 15-17 mins, tops should feel springy.
Serving Suggestions
could add choc chips (85g), or powdered choc , bananas, walnuts, coffee etc
