     Banana Bread

Ingredients
2 bananas mashed
2 eggs
1/2 cup oil
1/4 cup plus 1 TBSP buttermilk or plain yogurt (I use yogurt)
1 tsp vanilla
1 1/2 cups sugar
1 3/4 cups flour
1 cup nuts (vary depending on how nutty you would like it)
1 tsp baking soda
 
1/2 tsp salt

Instructions
Grease (with Crisco or something) and flour 9 x 5 loaf pan. Preheat oven to 350 degrees. Combine the first group of items  in a large bowl and blend well. Combine remaining ingredients and mix well. Transfer to the prepared pans. Bake about  1 hour (keep an eye on it). Check with toothpick
When I cook it I normally turn it down to about 325 after 30 min. or so because it already seems to be getting fairly dark. I then have to cook it just slightly longer (1 hour 10 min. or so). But don't be worried that it is getting really dark and the middle is not done, I think it might be the addition of the yogurt that does it or just the sugar. I also double this recipe to make two loaves. I hope you enjoy!
