     Brian's Carrot Cake with Cream Cheese Icing

Ingredients
2 cups sugar
4 eggs
1 cup oil
1 can crushed pineapple, drain and save juice
2 cups grated carrots
1 teaspoon vanilla
2 cups flour
2 teaspoons baking soda
1 teaspoon cinnamon
 
1/2 teaspoon salt
CREAM CHEESE ICING
2 Tablesppons pineapple juice
8 ounces cream cheese, softened
1 stick butter, softened
1 1/2 cups powdered sugar
1 teaspoon vanilla
Walnuts if desired

Instructions
Place all ingredients for cake in a big bowl and mix until uniform consistancy. Bake at 350 degrees for 1 hour in a 9x13 pan.
Mix all icing ingredients together and mix well until fluffy and uniform. Spread over cake and top with chopped walnuts.
Chill and serve.
Serving Suggestions
This is a very decadent cake, eat with caution, is addictive!
