     Chicken Cobbler

Ingredients
1 lb boneless, skinless chicken breasts, cut into bite-size pieces
1 (1 lb) pkg frozen mixed vegetables
1/2 cup frozen chopped pnion (or 1 medium onion, chopped)
2 (12 oz) jars fat-free chicken gravy
1 1/2 cups dry pancake mix
3/4 cup fat-free, low-sodium chicken broth
 

Instructions
Spray slow cooker with nonfat cooking spray.
In the cooker, stir together chicken, frozen vegetables, onion, and gravy until well mixed. Cover and cook on high for 2 hours.
In a medium bowl stir the pancake mix and broth together to make a thick batter. Spread the batter over the boiling gravy in the slow cooker.
Cover and cook on high for another 1/2 hour.
