Cut potatos lenghtwise into fourths. Carfuly scoop out pulp, leaving 1/4- inch shells. Cover and refrigerate potato pulp for another use.
Set oven to broil. Place potato shells, skin side down, on rack on broiler pan. Spray with butter flavored cooking spray. Sprinkle with garlic powder. Broil with tops 4 to 5 inches from heat about 5 min or until crisp and brown.
Sprinkel chicken and cheese over potato shells. Broil about 30 seconds or unil cheese is melted. Sprinkle with bacon bits. Serve with ranch dressing.
For Tex-Mex: Use refried beans insted of chicken. also sprinkle with bell peppers and onions. serve with sour cream and salsa.
