     Macaroni Salad

Ingredients
16 oz package elbow macaroni
1 med white or yellow onion
1 red bell pepper
3 celery stalks
1 to 1 1/2 cups of mayonaise (add to taste)
salt
pepper
2 hard boiled eggs
sprinkle of paprika
 
2 to 3 scallion tops

Instructions
Premake the pacakage of elbow macaroni to diretions on package and rinse in cool water, set aside. Make 2 hard boiled eggs and set aside
Dice up onion, red pepper, celery. Add the onion, red pepper, celery, salt & Pepper to taste to the pasta. Add mayonaise to taste. Personally if using next day I will add additional mayonaise the following day as the pasta absorbs the mayonaise over night.
After all ingredients are added slice the hard boiled eggs (an egg slicer works perfect) and put all around the border of the bowl. Then snip in small pieces the tops of the green onions and place in center. Sprinkle entire dish with paprika.
