     Sausage with Potatoes and Peppers

Ingredients
1 pound Italian sausage links, turkey italian, kielbasa or polish sausage
1-1/2 lb bell peppers - mixed colors
1 small jalapeno, minced (optional)
1 lb new red or white potatoes, peeled
1 large onion
1/4 Cup extra virgin olive oil
salt and pepper
 

Instructions
Preheat oven to 425 deg. Prick sausage links all over and blanch in simmering water for about 8 minutes to remove excess fat.
Cut bell peppers into 1/2 inch cubes. Cut raw potatoes into 1 inch cubes.
Pile vegetables along with minced jalapena into a casserole dish. Drizzle oil over to coat. Sprinkle with salt and pepper and top with sausages.
Bake one hour or until potatoes are tender.
