     Sharla's Salsa

Ingredients
6 quarts tomatoes chopped
6 cups chopped celery
4 cups chopped onion
1/4 cup pickling salt
1 cup Vinegar
1 cup white sugar
2 tbsp mustard seed
1/16 cayenne pepper
 
dash red pepper flakes
1/2 jalepeno pepper
1 each red, green and yellow pepper, chopped
1/2 cup corn optional
2 -16 oz can tomatoe paste.

Instructions
Combine tomatoes, celery and onion along with pickling salt and let stand overnight. Strain off juice in am.
In a large pot add the above mixture, along with the vinegar, white sugar, mustard seed, cayenne pepper, pepper flakes and jalepeno pepper. Boil until the celery is soft.
Then add pepper, corn and tomatoe paste and mix.
Put in hot sealers and let seal.
