     Chunky Vegetable Chili

Ingredients
1 medium succhini, cut into 1/2 inch pieces
1 medium green pepper, chopped coarsely
1/2 cup coarsely chopped onion
1/2 cup coarsely chopped celery
2 cloves garlic, minced
2-3 teaspoons chili powder
1 teaspoon dried oregano, crushed
1/2 teaspoon ground cumin
2 (14 ounce cans) Mexican style stewed tomatoes undrained, chopped if desired
 
1 (17 ounce) can whole kernal corn, undrained
1 (15 ounce) can black beans, rinsed and drained (I like 2 cans)
8 ounces salsa
Sour cream

Instructions
In a 4 quart crock pot, combine zucchini, green sweet pepper, onion, celery, garlic, chili powder, oregano and cumin. Stir in tomatoes, corn, beans and salsa.
Cover, cook on low heat for 8-10 hours or high heat for 4-5 hours. To serve, ladle into bowls and top with dollop of sour cream.
